Godmorgen!

Jeg tror ikke, at jeg kan beskrive, hvor meget jeg elsker brunch. Noget der kan få smilet frem på mine læber lige inden at jeg lægger mig til at sove, er tanken om, at jeg skal nyde en rigtig god morgenmad med Frederik, når jeg vågner. I København findes der simpelthen så mange lækre brunchsteder, så hvis du er en ligeså stor brunch elsker som mig, er det helt sikkert værd at kigge forbi følgende, når lejligheden byder sig: Sidecar, Mad&kaffe eller en lækker sommerbrunch hos Toldboden

Lige så meget som jeg elsker forskellige brunchsteder i byen, er jeg virkelig også en sucker for at lave det selv. Det giver nemlig mulighed for at nyde morgenen i køkkenet og danse til “højt humør” playlisten på Spotify, samt kombinere ens yndlingsmorgenmad med de bedste omgivelser derhjemme. Der er ingen stress og jag, fordi man ikke skal være ude af døren på et bestemt tidspunkt. Dette giver også anledning til de bedste samtaler til at kickstarte en fantastisk søndag.

Jeg håber I nyder den dejlige forårssøndag.

I love brunch in an indescribable way. Something that always put a smile on my lips before falling asleep at night, is the thought of having a wonderful breakfast with Frederik when I wake up the following day. Copenhagen offers a lot of delicious opportunities for brunching, so should you be as much into brunching as me, I would definitely recommend checking out the following places when you have the chance: Sidecar, Mad&kaffe, or a delicious summer brunch at Toldboden. 

As much as I like different brunch places in the city, I am also quite the sucker for making it myself. Doing so creates an opportunity to enjoy the morning in the kitchen, and dance to a happy playlist on Spotify, as well as combining your favorite breakfast with the cozy surroundings of your own home. There’s also no rush in the morning, as nobody is heading out the door anytime soon! In my experience, this also leads to great conversations to kickstart an amazing Sunday.

GIRLS NIGHT

Billeder fra gårsdagens girls’ night tapas aften hos min veninde Amalie. Vi er en gruppe piger fra mit studie der samles en gang i mellem, og hygger med lækker mad og vin. Som regel tager vores lille arrangement plads hos Amalie, som virkelig forstår hvad det vil sige at “gå all in” på lækker mad. Jeg kender ingen pige som hende, der formår at diske op med en utrolig anretning hver gang. Der bliver hverken sparet på guldglimmeret eller de små skovsyreblade 🙂 Tak for en dejlig aften med lækker mad!

//Pictures from yesterday’s girls’ night tapas evening at my friend Amalie’s place. We are a group of girls who once in a while gather to eat great food and drink some wine. Usually, our small arrangement take place at Amalie who really understand what it means to “go all in” on delicious food. I don’t know any girl like her, who manages to dish out the most incredible dinner every single time. There are no savings on the golden glitter, nor the small purple butterfly sorrel leaves 🙂 Thank you for a great evening and delicious food!

MY FAVORITE GREEN SALAD

Jeg vil lige dele verdens mest simple opskrift på den bedste salat jeg længe har smagt. Jeg lavede den for første gang i dag, og jeg kan simpelthen ikke få nok! Salaten er ikke kun velsmagende, men indeholder ligeledes protein, mættede fedtstoffer, fibre og antioxidanter, hvilket alt sammen er virkelig godt for kroppen.

Kylling:

  • Krydder kyllingen med salt, peber og chili.
  • Steg kyllingen på panden i olivenolie.
  • Når kyllingen er næsten stegt, tag en teskefuld honning og smid det på panden sammen med kyllingen.

Salaten:

  • Rist lidt nødder og kerner (fx. solsikkekerner og peanuts) på panden.
  • Skyl og hak grønkål, spinatblade, agurk og bønner.
  • Tag en halv avocado og skær den i tern.
  • Mix ovenstående i en skål.

Dressing:

  • Mix citronsaft, olivenolie og soyasovs sammen i en skål.
  • Tilsæt salt og peber og smag dressingen til.
  • Hæld dressingen ud over salaten og kyllingen og mix det hele sammen.

// I wanna share the worlds most simple recipe, for the best salad I have tasted in quite a while. I made it myself for the first time today, and I simply cannot get enough! The salad is not only great-tasting, but also contains protein, saturated fat, fibres as well as antioxidants. All of which do wonders for you body.

The chicken:

  • Season the chicken with salt, pepper and chili.
  • Roast the chicken in a pan with olive oil.
  • When the chicken is almost done, grab a teaspoon of honey and pour it into the pan together with the chicken.

The salad:

  • Roast some nuts and grains (for example, sunflower seeds and peanuts) in a pan.
  • Wash and chop kale, spinach leaves, cucumber and green beans.
  • Grab half an avocado and chop it into cubes.
  • Mix all of the above in a bowl.

The dressing:

  • Mix citrusjuice, olive oil and soy sauce together in a bowl.
  • Add salt and peber till it arrives at your preferred taste.
  • Pour the dressing over the salad and the chicken, and mix it all together.

Mindful eating – take time for what matters.

For mig er mad en kæmpe del af, hvad der gør mig glad i min hverdag. Det har taget mig nogen tid at indse, at jeg ikke er en person der kan leve med det mindset, at mad blot er fuel til at holde kroppen i gang. Gennem de forskellige faser i mit liv har jeg da også afprøvet diverse forskellige mad-diæter for at være så “sund” som mulig. Og ligeså meget som mad gør mig glad, har jeg også knoklet med, at mad har gjort mig ked af det og givet mig utrolig dårlig samvittighed.

Jeg har derfor fokuseret på at få et bedre syn på og en sundere tilgang til mad. En tilgang, hvor jeg ikke skal være på en evig “kur”, eller optjene point for at kunne spise mit fredagsslik 😀 Ligeledes har det været vigtigt for mig, at jeg har været i stand til at finde min egen stopknap, og blive i stand til at skelne mellem at være sulten og være ked af det eller bare kede mig. Efter min mor oplevede, at jeg kunne spise en hel broccoli tærte (min livret) for mig selv, introducerede hun mig for mindful eating.

Mindful eating handler ikke om hvad du spiser, men om hvordan du spiser. Mange af os har gennem tiden påtaget os diverse bevidste og ubevidste spiservaner. Dette gælder fx. at spise foran tv’et, at “kværne” en pose chips uden egentlig at tænke over det, eller at vandre frem og tilbage mellem køkkenet og stuen for at “snacke” mad grundet ren kedsomhed.

Gennem mindful eating har jeg lært at tolke signalerne for, hvornår, hvor meget og hvad min krop gerne vil spise. Man kan læse en masse studier om mindful eating, og hvilken effekt dette har på din krop og på dit sind. Jeg tænkte alligevel, at jeg ville dele et billede af nogle tips som kan benyttes i hverdagen. //For me, food has always been a huge part of what made me happy during the day. It has taken me some time to realize that I am not a person who can live with a mindset, that food is just fuel to get the body going. Through different stages of my life, I have tried out a lot of different diets to be as healthy as possible. And as much as food makes me happy, food also have the ability to make me sad and give me a bad conscience.

Because of that, I have focused on getting a better and more happy approach towards food. An approach that does not include me being on a “diet” for the rest of my life, nor earn points so that I am able to get my candy on Friday evening 😀  It has also been equally important for me to be able to find my own stop button and be able to distinguish between being hungry, sad or just plain out bored. After my mom experienced me eating a whole broccoli pie (my favorite dish), she introduced me to mindful eating.

Mindfull eating is not about what you eat, but how you eat. Many of us have throughout time obtained various conscious as well as unconscious eating habits. This applies to, for example, eating in front of the TV, binge eating a bag of chips without giving it a second thought, or to wander back and fourth between your kitchen and living room to snack, purely out of boredom.

Through mindfull eating I have learned to read the signals in regards to when, how much and what my body would like to eat. There are lots of studies on mindful eating, and what effect this has on your body and mind. Still, I figured I’d share share a picture with some useful tips you can use in your everyday. Jeg glæder mig til en weekend med EM håndbold, venner til spisning og lidt indkøb til den kommende skiferie. Der er sket meget det sidste halve år. Det føles allerede som alt, alt for lang tid siden, at Frederik og jeg besøgte Emma og Jon i Stockholm. Det var virkelig nogle skønne måneder smækfyldt med oplevelser, familiehygge og det bedste praktikophold jeg nogensinde kunne have ønsket mig. Jeg glæder mig allerede til at skulle til Stockholm igen og sige hej til dem alle sammen <3

It already feels like way too long ago, since Frederik and I visited my brother and his family in Stockholm. RAW CHOCOLATE CAKE

Takket være en utrolig lækker brunch hjemme ved min veninde, Emma, fik jeg opskriften på en virkelig lækker raw chokoladekage. Jeg vil ikke beskrive mig selv som en ørn i et køkken, og indeholder en opskrift mere end 8 forskellige ingredienser, er min tålmodighed næsten lig zero. Trods manglende tålmodighed, er jeg alligevel siden at jeg flyttede hjemmefra blevet mere og mere interesseret i det gastronomiske køkken 😀 Derfor elsker jeg også, når jeg løber ind i simple opskrifter, som giver virkelig lækre resultater. Jeg tænkte derfor, at jeg ville dele opskriften til andre der vil nyde den kommende weekend med et stykke chokoladekage.

RAW CHOKOLADEKAGE – 12-16 personer

Bund

  • 100 g pekannødder
  • 100 g mandler
  • 1/2 dl kakao (helst raw fordi den har en mild smag og er smækfyldt med mineraler og antioxidanter)
  • 2 store spsk kokosolie
  • 30 g kakaosmør (kan erstattes med kokosolie)
  • 1 smule vaniljepulver
  • 1 knsp salt

Fyld

  • 450 g dadler (helst af den bløde slags med sten i)
  • 1½ dl kokosolie
  • 1 dl kakao (igen, helst raw, ellers kan du ikke regne med mængden)
  • 2 tsk vaniljepulver
  • ½ tsk salt

Bunden

Smid de tørre ingredienser i foodprocessoren, til nødderne er så fint malet, som du ønsker dem. Når nødderne er blendet til den konsistens, du ønsker, hælder du det over i en skål og blander de to flydende ingredienser – kokosolie og kakaosmør i. Bland fedtstofferne godt med nøddemelet og klat dejen ud i en springform.Stil formen med kagebunden på køl, så den lige får lov at sætte sig. Det gør det meget nemmere at fordele fyldet efterfølgende.

Fyldet
Tag stenene ud af dadlerne og smid dem i din foodprocessor med de andre ingredienser. Tilsæt lidt vand, hvis du mangler væske.

Når massen er fin, fordeles den ovenpå bunden. Sæt den efterfølgende på køl eller frost.

// Thanks to an incredibly delicious brunch at my friend Emmas’ place, I got the recipe for a very delicious raw chocolate cake. I wouldn’t describe myself as the best chef in the kitchen, and should a recipe contain more than 8 different ingredients, my patience basically drops to zero. Despite this lack of patience, I have had a growing interest in the gastronomic kitchen since moving away from home. Therefore, I love when I run into simple recipes which turns into delicious results. Therefore, I thought that I would share this recipe, for those of you who would like a piece of chocolate cake this upcoming weekend.

RAW CHOCOLATE CAKE – 12-16 pers.

Bottom

  • 100 g pecans
  • 100 g almonds
  • 1/2 dl cocoa
  • 2 store tablespoons of coconut oil
  • 30 g cocoa butter
  • a pinch of vanilla
  • 1 pinch of salt

Fyld

  • 450 g dates
  • 1½ dl coconut oil
  • 1 dl cocoa
  • 2 teaspoon of vanilla
  • ½ teaspoon of salt

Put the dry ingredients into the foodprocessor, until the nuts are as finely grounded as you wish for them to be. When it is done,  pour it into a bowl and pour the two liquid ingredients, coconut oil and cocoa butter, into the mix. Blend the oils and fats with the nut flour, whereafter you put the substance into a springform. Put the form with the cake bottom into the fridge, so it gets hard and cold. It eases the next step, which is to spread the fill.

Fillings

Take the stones out of the dates and toss them into the foodprocessor with the other ingredients. Add a bit of water, if you feel like you lack fluids.

When the mass seems good, spread it on top of the bottom. Afterwards, put it into the fridge.

Ginger shot

ENERGY BOOST AND DETOX AFTER CHRISTMAS

Jeg tænker, at det er på tide at dele min simple opskrift på ingefærshots. Flere har efterhånden spurgt mig, om det er svært at lave, og om de efterfølgende må få opskriften. Så nu lægger jeg opskriften ud, til dem der måtte være interesseret. Der er ingen grund til at bruge 30 kr. på et lille ingefærshot, når du kan lave dem selv og spare penge. Alt du skal bruge er følgende:

3 x citroner (helst økologiske, da de skal koge med skralden på)

2 x ingefærrødder (helst økologiske, da de skal koge med skralden på)

1 x spsk. Honning

1 x gryde vand

  • Fyld gryden med vand og lad vandet koge op.
  • Vask citronerne og ingefæren, og skær dem i skiver. Læg dem derefter i gryden med vand og lad dem koge op sammen med vandet.
  • Kom til sidst 1 spsk. honning i vandet (eller efter eget behov) til at søde drikken op.
  • Lad det alt sammen koge op og smag derefter på drikken. Jo længere tid det koger, jo mere smag får vandet.
  • Når du er tilfreds med smagen, lad vandet køle af. Når drikken er kølet af, skal den hældes i en kande eller på flaske og stilles i køleskabet.
  • Efter nogle timer på køl, har du dine færdige ingefærshots. Velbekomme 🙂

//I figured it was about time I shared my simple recipe for gingershots. Several of my friends and family members have asked me about it, whether it’s hard to make and if they can have the recipe. So here it is, for those of you who might be interested. There is no reason to spend a lot of money on a single, small gingershot, when you can make them much cheaper yourself. All you need is the following:

3 x lemons (preferably organic, as they need to cook with skin on)

2 x gingers (preferably organic, as they need to cook with skin on)

1 x table spoon of honey

1 x pot of water

  • Fill the pot with water and heat it up to the boiling point.
  • Wash the lemons and gingers, and cut them into slices. After, put them into the water and let it cook together until the boiling point.
  • Put one table spoon of honey into the water (or a bit more/less, depending on your own taste) to sweeten it up.
  • Let it all boil for a few minutes and then taste the water. The longer time it boils the more tasteful the water will get.
  • When you are satisfied with the taste, let the water cool off. When it has cooled off, pour it into a decanter and into the fridge.
  • After a few hours in the fridge, you have your very own gingershots. Bon appetite J

NEW BREAKFAST FAVORITE

Endnu engang er weekenden ved at være slut. Dette betyder også, at det endnu engang er tid til at planlægge en ny uge. Der er efterhånden ikke lang tid til, at Frederik og jeg skal tilbage til København, hvilket betyder, at vi går en lidt presset periode i møde. Der er meget som skal koordineres, for at vi kan komme hjem og få lejligheden på plads. Jeg kan simpelthen ikke vente til, at vi flytter ind !

I stedet for at sidde derhjemme og snakke det hele igennem, besluttede vi os for, at tage på et lille roadtrip. Noget af det bedste jeg ved er, at køre bil, synge med på alt for høj musik og at køre uden nogen fast destination. Prikken over i’et var selvfølgelig, at vi havde sørget for at medbringe vores nye favorit morgenmad, Acai bowl, fra ét af Stockholms muligvis mest populære frokoststeder, Mahalo. Det er helt sikkert værd at besøge, men sørg for at komme udenfor deres morgenmads- og frokosttid, da det er helt umuligt at få bord i dette tidsrum !

I morgen siger jeg farvel til Frederik for de næste fire dage. Forhåbentlig betyder det, at jeg kan være rigtig produktiv og få ordnet en helt masse praktiske ting, begynde på min opgave til skolen og få lidt sved på panden i SATS (vores fitness center).

//Once again, the weekend is almost over. This also means that once again, it’s time to start planning the upcoming week. Since Frederik and I are soon moving back to Copenhagen, everything is starting to turn a little bit hectic with our rather busy schedules. There is a lot that needs to be coordinated, for us to get everything sorted and ready to move into our new apartment. And I just can’t wait for the two of us to move in !

Instead of sitting at home talking everything through, we decided to go for a little roadtrip. One of my favourite things to do is to go for a ride, sing along to way to loud music and having no pre-determined destination. The cherry on top were of course, that we decided to bring our favourite breakfast, Acai Bowl, from maybe one of the most popular lunch places in Stockholm, Mahalo. I can definitely recommend this place, but make sure to visit outside breakfast and lunch time, since it’s impossible to get a table during that time !

Tomorrow, I am saying goodbye to Frederik for the next four days. Hopefully this means that I can be really productive and get a lot of stuff done. I would like to get started on my school paper and last but not least break a sweat at the gym.
